8 Open capped mushrooms (about 3” (7.5cm) in diameter

Butter or margarine 100g (4oz)

2 crushed garlic cloves

2 tsp Lemon juice

1 tbsp chopped parsley

1 tbsp chopped chives,

Salt and pepper to taste

100g (4oz) Wholemeal breadcrumbs

25g (1oz) Parmesan cheese

Paprika & watercress sprigs to garnish

Preparation time: 20 minutes

Cooking time: 15 minutes


Wipe mushrooms with a damp cloth.  Remove the stalks and chop finely.  Mix together the softened butter, garlic , lemon juice, herbs and salt and pepper and beat will.  Then beat in the chopped mushroom salks and the breadcrumbs and divide the mixture evenly between the mushroom caps, pressing it on to each mushroom firmly.  Sprinkle with Parmesan cheese.  Arrange in a baking dish and bake at 220C ( 425F/gas mark 7) for about 15 minutes until sizzling.  Sprinkle with paprika, garnish with watercress and serve immediately.
