8oz flour (with plain flour use 3 level teaspoons baking powder)

4oz margarine

4oz sugar

1 or 2 eggs

Little milk



Sieve together t he flour and baking powder, if used, into a large bowl.

Rub in fat until the mixture resembles breadcrumbs.

Add the sugar

Stir in the egg or eggs, using a knife.

Stir in the milk gradually – use approximately 4 with one egg or 2 tablespoons with 2 eggs.  The mixture should drop from the knife if shaken sharply.

When the mixture is on the baking trays make a small ‘dent’ in the centre of each bun, using a fork or teaspoon.

Put a small amount of jam in the ‘dent’.

Pull the cake mixture round the jam with a fork or spoon.

Bake for 12-15 minutes near the top of a hot oven (425-450F, Gas mark 6-7)

Cool for 2-3 minutes on the tray, and lift on to a wire cooling tray.
