350g mixed fruit.
225g light muscovado sugar.
1/2 pint earl grey tea two tea bags.
275g self raising flour.
zest 1 lemon.
1 large beaten egg.
Soak fruit and sugar in the tea over night.
Put flour lemon zest and beaten egg and mix well.
Place into a 2pound loaf tin or 2 one pound loaf tins and bake at 150°, 130° fan oven, gas mark 2 for 1¼ to 1½ hours.
